Zucchini flan with pink sauce

Ingredients

• Zucchini Unpeeled, washed and cubed 7 cups
• Parsley Coarsely chopped ¼ cup
• Mint Leaves only, chopped 2 sprigs
• Lemon zest 2 tsp
• Extra virgin olive oil 2 oz
• Butter 2 tbsp
• Yellow onions Medium, diced 1
• Fresh garlic Large, minced 2 cloves
• White wine Light body, dry , such as Pinot Grigio ⅓ cup
• Salt and Pepper To taste
• Cheddar cheese White, aged, grated ½ cup
• Eggs Large, beaten 2
• Mayonnaise ½ cup
• Ketchup 4 tbsp
• Lemon juice To taste
• Fresh garlic Large, grated 1 clove
• Honey 1 tsp
• Worcestershire sauce ½ tbsp
• Dijon mustard optional 1 tbsp
• Sweet Pickle Relish 1 tbsp
