Australian Sweet Potatoes | Sweet Potato and Pecan Pies

Ingredients

• 1 1/2 cups (225g) plain flour
• 2 tbsp icing sugar
• 125 g cold butter, chopped
• 1 egg yolk
• 1-2 tbsp iced water
• 500 g Sweet Potato, peeled, chopped
• 1/2 cup (110g) brown sugar
• 1 tsp vanilla bean paste
• 1 tsp cinnamon
• 1/2 tsp ground ginger
• 1/4 tsp nutmeg
• 1 cup (250ml) pouring cream
• 2 eggs
• 1/2 cup chopped pecans
• Whipped cream and maple syrup to serve
