• 6 ears corn
• 1 Tbsp + 1/4 cup DLM Extra-Virgin Olive Oil
• 1 tsp salt
• Pinch or two of red chili flakes
• 2 cup cooked grains like red quinoa or farro at room temperature
• 3 ripe peaches
• 1 small red onion
• 1 small jalapeño
• ½ cup parsley
• ¼ cup mint
• 2 Tbsp fresh lemon juice, or more to taste
• Salt and pepper to taste
