• 1 teaspoon vanilla extract
• 8 ounces crushed pineapple (drained)
• 2 large bananas (overripe, mashed)
• 1 cup pecans (toasted and finely chopped)
• 12 ounces cream cheese (at room temperature)
• 1 cup butter (softened)
• 4 cups powdered sugar
• 1½ cup sweetened coconut (toasted)
• ½ cup pecans (chopped)
