Ingredients

• 1 kg ripe Bord Bia Quality Mark tomatoes
• 2 onions (cut into thin wedges (skin still on))
• 1 bulb garlic (broken into cloves (not peeled))
• 1 large red chilli
• 2-3 fresh rosemary sprigs
• 1 tablesp. balsamic vinegar
• 2 tablesp. rapeseed or olive oil
• 600 ml vegetable or chicken stock (from cubes is fine)
• 4 tablesp. cream
• Sea salt and freshly ground black pepper
• Croutons (to serve)
