• 5 oz Earthbound Farm Beet Greens Blend
• 1 ripe avocado, sliced
• 1 cup sungold tomatoes, halved
• 3 oz marinated feta cheese, crumbled or cubed
• 3 Tbsp extra-virgin olive oil
• 1 Tbsp white wine vinegar (or red wine vinegar)
• 1 tsp Dijon mustard
• ½ tsp honey (optional, for balance)
• Sea salt, to taste
• Freshly cracked black pepper, to taste
