Pumpkin Cheesecake Recipe

Ingredients

• 1 cup pecans
• 1/2 cup all-purpose flour
• 1/2 cup brown sugar
• 1/2 cup graham cracker crumbs (approximately 4 graham crackers)
• 2 tablespoons unsalted butter, softened
• 1 egg yolk
• 2 15-ounce cans pumpkin purée (see Recipe Note)
• 3 tablespoons all purpose flour
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground ginger
• 1/4 teaspoon freshly grated nutmeg
• 1/4 teaspoon ground allspice
• 1/4 teaspoon salt
• 2 tablespoons vanilla extract
• 2 tablespoons bourbon or other whiskey
• 5 large eggs
• 4 8-ounce packages cream cheese, room temperature
• 2 cups (packed) brown sugar
