Ingredients

  • 2 oz dried kombu (about 2 large pieces)
  • 4 qt cold water
  • 1 cup soy sauce
  • 1/2 cup sake
  • 1/2 cup mirin
  • 2.5 lb boneless pork shoulder
  • Kosher salt and freshly ground black pepper
  • Kitchen twine
  • 2 tbsp neutral oil
  • 1.5 lb pork spareribs
  • 1.5 lb chicken wings
  • 1 bunch scallions (halved)
  • 2 carrots (roughly chopped)
  • 1 head garlic (halved crosswise)
  • 4- inch piece ginger (sliced)
  • 1 cup bonito flakes (katsuobushi)
  • 6 large eggs
  • 1.5 lb fresh ramen noodles (or 12 oz dried)
  • 1/2 cup menma (fermented bamboo shoots)
  • 3 sheets nori (halved)
  • 4 scallions (thinly sliced)
