Ingredients

• 3 1/2 pounds (1.75 kg) assorted small beets trimmed and cleaned
• 2 small red onions each cut into 8 wedges
• 1 tbsp (15 ml) olive oil
• 1 1/2 tsps (7 ml) organic rosemary crushed
• 1 1/2 tsps (7 ml) organic thyme leaves
• 1/2 tsp (2 ml) sea salt grinder
• 2 tbsps (30 ml) balsamic vinegar
