Strawberry Rhubarb Cheesecake Bars - Golden Barrel

Ingredients

• 2 1/2 cups all-purpose flour
• 1 cup Golden Barrel Light Brown Sugar
• 1 cup chopped, toasted pecans
• 1 cup butter, chilled and cut into pieces
• 4 cups chopped rhubarb
• 2 cups chopped strawberries
• 3 Tbsp corn starch
• 2 8 oz bricks cream cheese (at room temperature)
• 2 cups Golden Barrel organic cane sugar (divided)
• 2 eggs
• 1 tsp vanilla extract
