Lynn's Recipes - Chicken and Rice Casserole

Ingredients

• 1 cup rice, Arborio or regular white rice
• 2 boneless skinless chicken breasts
• 1 package dry onion soup mix
• 1 can cream of mushroom soup
• ¾ cup roughly chopped onion
• 1 package chopped mushrooms
• 1 package spinach
• 2 cups water
• Salt and pepper to taste
