Hot Honey Chicken Parm - The Foraging Fox

Ingredients

• 1 tbsp oil
• 1/2 small white onion diced finely
• 1 tbsp crushed garlic
• Pinch of smoked salt (@maldonsalt)
• 1 tbsp tomato puree
• 1/2 shot tequila
• 1 cup chopped plum tomatoes
• Water to add to pan as needed
• Splash of milk
• 2 chicken breasts, flattened
• 1 egg
• 1/2 cup flour seasoned with salt
• 1/2 cup breadcrumbs with salt and paprika
• Oil to fry
• One ball of mozarella, sliced
• 100g manchego cheese, grated
• 8 slices pepperoni
• Handful diced chorizo
• A few slices of red chilli
• 2 tbsp hot honey
