Lobster Mac and Cheese - Lobster PEI

Ingredients

• 1 pound elbow pasta (or any short cut pasta)
• 9 tbsp butter
• 1 clove garlic
• 1 pound cooked lobster meat, chopped
• 1 tbsp fresh parsley, plus more for garnish
• 1 1/2 cups crushed Ritz crackers (about 1 sleeve)
• 1/4 cup flour
• 3 cups whole milk
• 1 1/4 cups sharp white cheddar cheese, shredded
• 1 1/4 cups gruyere cheese, shredded
• 1 cup fontina cheese, shredded
• 4 ounces brie, rind removed and chopped
• 1/4 tsp mustard powder
• 1/4 tsp cayenne
• 1/4 tsp salt
• 1/2 tsp pepper
