Chicken With Hoisin Sauce

Ingredients

• 4 chicken-breast halves, boned, skinned, and cut into 3/4-inch cubes
• 1 tablespoon cornstarch
• 1 tablespoon dry sherry (I buy the cheapest sherry I can)
• 1 tablespoon soy sauce
• 1 green pepper, cut into 1/2-inch squares
• 1 tablespoon vegetable oil
• 1/2 pound mushrooms, cut into 1/2-inch cubes (we always slice them)
• 2-1/2 tablespoons hoisin sauce (or a bit more if you want, it's great stuff)
• 1/4 cup cashews
