- 1 pound salt cod
- cut into 2-inch pieces*
- ½ pound russet potatoes (about 2 medium potatoes)
- 5 medium garlic cloves
- 3 thyme sprigs
- 1 bay leaf
- 1¼ cups olive oil
- ½ cup half and half
- Kosher salt and freshly ground black pepper
- 2 tablespoons finely chopped flat-leaf parsley leaves
- Zest of ½ lemon
- 1 cup Parmigiano-Reggiano
- 2 cups pitted green olives
- ¼ cup chopped red onion
- 2 tablespoons chopped basil
- 2 tablespoons lemon juice
- 1 tablespoon freshly grated horseradish
- 1 tablespoon chopped garlic
- 1 tablespoon dijon mustard
- Tabasco
- Worcestershire sauce
- ½ cup olive oil
- 6 slices sesame bread, 1-inch thick
- *Note that the salt cod requires soaking for 24 hours before proceeding with the recipe.
