Christmas Cake

Ingredients

• 10oz flour
• Pinch Salt
• ½ tsp baking powder
• 1tsp ground cinnamon
• 1tbsp mixed spice
• 1lb cocoa powder
• 12oz mixed dried fruit chopped
• ½lb Sultanas
• ½lb currants
• 4oz glace cherries chopped
• ½lb blanched almonds (optional)
• ½lb butter, softened
• 4 dark soft brown sugar
• Finely grated rind and juice treacle, (substitute with molasses)
• 1tbsp brandy, or rum
• A little milk if necessary
• Finely grated rind and juice of 1 lemon
