Sweet Potato and Vegetable Soup with Kale, Chipotle and Cream - I Feel Like Cooking

Ingredients

• Peel and dice 1 ½ sweet potatoes
• Dice 3 T red pepper
• Chop one medium leek, white part only
• Rough chop enough kale for 1 heaping cup
• 1 can no salt added diced tomatoes
• Salt and Pepper
• 1/8 t cumin
• Sprinkle tarragon
• 1/8 t ground cinnamon
• 1 T chipotle sauce
• 2 C Beef stock
• 2 C water
• ½ C dry red wine
• 1 ½ C diced yellow squash
• 1/3 C frozen green peas
• 2T Sunflower oil
• 1/3 C heavy cream
