Jackson Salad

Ingredients

• 1/2 small onion, chopped
• 3 Tbs cider vinegar
• 2 tsp spicy brown mustard
• 1/2 tsp sugar
• 1/4 tsp fresh ground pepper
• 1 cup vegetable oil
• 1/2 pound bacon
• 2 bunches romaine lettuce, torn into bite-size pieces
• 1 7.5-ounce can hearts of palm, drained and quartered
• 1 8.5-ounce can water-packed artichoke hearts, drained and quartered
• 4 ounces blue cheese, crumbled
