  • 2 garlic cloves, thinly sliced
  • 2 bay leaves
  • A large sprig of thyme
  • 1tsp peppercorns
  • 1tsp allspice berries
  • 2 cloves
  • 1 blade of mace (from supermarkets)
  • 200ml (7fl oz) white wine
  • Flaked sea salt
  • Freshly ground black pepper
  • A pinch of cayenne pepper
  • 25g (1oz) butter, melted
