Ingredients

• 1 Tbsp olive oil
• 3 cloves garlic, sliced
• 1 red chilli, sliced
• 200g fresh tomatoes, diced
• ½ cup white wine
• 2 spring onions, chopped
• 16 mussels, cleaned
• ½ cup chopped coriander
• 1 cup Italian parsley leaves
