Steak Burgers with Anchovy Mayonnaise - Sutter Home Family Vineyards

Ingredients

• 11/2 pounds ground rib eye steak
• 1/2 pound ground sirloin steak
• 1/4 cup shallots, chopped finely
• 1/2 teaspoon each kosher salt and freshly ground black pepper
• 2 cups mayonnaise, home made is best here, recipe to follow if you want to do that.
• 2 ounce can anchovies, crushed and minced
• 2 teaspoon crushed garlic
• 2 hard cooked eggs, chopped
• 8 pitted kalamata olives, chopped
• 1 1/2 tablespoons capers, chopped
• 1 tablespoons lemon juice
• 1/2 teaspoon freshly ground black pepper
• 6 sesame seed kaiser rolls
• 6 slices American cheese, each about 1 ounce
• 6 slices red onion
• 6 slices tomato
• 12 Boston Bibb lettuce leaves
