Ingredients
- ½ cup butter, room temperature
- 1/3 cup molasses
- 2 eggs
- 1 teaspoon Amaretto, sweet Italian liqueur(optional)
- 1 ¼ cup sugar (I used turbinado)
- 1 2/3 cups all-purpose flour (I used King Arthur’s gluten free)
- 1 cup total of raisins, chopped nuts and/or flaked coconut (I used 1/3 cup of all three)
- 2 cups quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
