Ingredients

  • ½ cup butter, room temperature
  • 1/3 cup molasses
  • 2 eggs
  • 1 teaspoon Amaretto, sweet Italian liqueur(optional)
  • 1 ¼ cup sugar (I used turbinado)
  • 1 2/3 cups all-purpose flour (I used King Arthur’s gluten free)
  • 1 cup total of raisins, chopped nuts and/or flaked coconut (I used 1/3 cup of all three)
  • 2 cups quick-cooking oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
