Italian Style Zucchini, Pepper and Eggplant Parmigiana
This eggplant parmigiana has the addition of zucchini and peppers. Or make it a straight zucchini parmesan. One of our great Italian recipes.
Ingredients
- 1 eggplant
- 2 zucchini
- 1 red pepper
- 2 onions (large)
- 2 tablespoons oil
- 2 cups tomato sauce
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon oregano
- 2 - 3 tablespoons parmesan cheese (grated )
- 8 ounces mozzarella cheese (grated, to top (optional))
