Ingredients
- 2 tbsp Olive oil
- 1 Onion finely chopped
- 4 Garlic cloves chopped
- 1 tsp Ground Cumin
- ½ tsp Hot smoked paprika
- ¼ tsp Ground all spice
- 1 tbsp Tomato Puree
- 2 Tins chopped tomatoes
- 750 ml Chicken stock or vegetable stock if making the vegetarian option
- 2 Chicken breasts
- 100 g Fideo, vermicelli or other small pasta
- Salt and pepper to season
- 2 Limes, juiced
- Chopped avocado to serve
- Chopped coriander to serve (optional)
