Lingham’s Hot Tomato Salsa

Ingredients

• Finely chop the tomatoes and coriander and place in to a large bowl
• Peel and finely chop the onion
• Peel and finely grate the garlic
• Add the onion and garlic in to the bowl of tomatoes and coriander
• Add lime juice, extra virgin olive oil and mix well
• Season with salt, black pepper and more lime juice (if needed)
• Serve straightaway or cover and set aside for a few hours to let the flavours develop
