Coniglio in agrodolce – Sweet & Sour Braised Rabbit – Jen Smith – Med Meanderings
Agrodolce is a traditional sweet/sour sauce believed to have originated in Sicily.
Ingredients
- 1 rabbit (about 700g) cut into 8 pieces
- 75g (½ cup) plain flour
- 60ml (¼ cup) olive oil
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 small brown onion, finely chopped
- 3 garlic cloves, finely chopped
- 20g butter
- 150g prosciutto, chopped
- 2 juniper berries
- 5 black peppercorns
- 3 thyme sprigs, plus extra to serve
- 60ml (¼ cup) white wine vinegar
- ¼ cup raisins
- 1 tablespoon sour cherries
- 40g (¼ cup) pine nuts, toasted
- 25g (¼ cup) walnuts, chopped
- 60g dark chocolate, (70% cocoa solids) finely chopped
