Ingredients

• 2 boneless chicken breasts, sliced horizontally into two cutlets (allow 1 cutlet per person), pounded to approximately ¼-inch thickness
• 1 c flour
• 1 tsp cayenne
• 1 tsp dry mustard powder
• 1 tsp salt
• 2 eggs, whisked
• 1½ c bread crumbs
• 4 c green cabbage, shredded fine either by hand or with a mandoline
• 3 tbsp rice wine vinegar
• 2 tbsp neutral oil, such as grapeseed
• 1 tbsp lemon juice
• 1 tsp celery salt (recipe below)
• ½ c kosher salt
• 1 c celery leaves
• Mayonnaise
• Focaccia or sandwich bread of choice
