• 2 cups shredded carrots
• 2/3 cup packed light brown sugar
• 1/4 cup of honey
• 1/2 teaspoon salt
• 1/2 cup carrot juice (cold)
• 1/4 cup of canola oil
• 1 large egg
• 1 1/2 teaspoon of vanilla extract
• 2 teaspoons ground cinnamon
• 3/4 teaspoon baking soda
• 1 1/2 cups of all-purpose flour
• 1 cup California Walnut Pieces, coarsely chopped
