Ingredients

• 5- to 6-pound turkey, cut in quarters and prepared as for Turkey Chili
• 2 large onions, coarsely chopped
• 3 tablespoons butter
• 3 tablespoons olive oil
• 6 large ripe tomatoes, peeled, seeded, and chopped
• 1/2 cup fresh basil leaves, finely chopped, or 2 to 3 teaspoons dried basil
• Salt, freshly ground pepper to taste
• 2 to 3 pounds hot spaghettini, cooked al dente and drained
• Grated Romano cheese
• Grated Parmesan cheese
