Ingredients

• 2 lbs Yukon Gold potatoes , peeled and cut into 1/2-inch cubes
• 4 large pre made hard boiled eggs , peeled and chopped
• 1 cup frozen peas, thawed
• 1 cup carrots, peeled and finely diced (about 2 medium carrots)
• 1/2 cup sour dill pickles , finely diced (look for the best dill pickles for authentic flavor!)
• 1/2 cup finely chopped yellow onion
• 1 cup good quality mayonnaise (or try our homemade dill pickle mayo for an extra kick!)
• 2 tablespoons Dijon mustard
• 1 tablespoon white wine vinegar for cooking (or apple cider vinegar)
• 1 teaspoon sugar
• Salt and freshly ground black pepper to taste
• Optional: 1/4 cup fresh parsley or dill, chopped, for garnish
