Ingredients

• 4 to 5 large zucchini, peeled into thin, flat strips or “zoodles”
• 3 teaspoons salt, divided
• 2 teaspoons black pepper, divided
• 4 Tablespoons olive oil, divided
• 1 medium onion, diced
• 2 medium carrots, diced
• 1 stalk celery, diced
• 4 cloves garlic, minced
• 1 Tablespoon dried oregano
• 1 Tablespoon dried basil
• 10 large plum tomatoes, roughly chopped
• Pinch of cayenne or red pepper flakes, if desired
