Recipe: Roasted Beet Salad

Ingredients

• 1 large or 2 small bunches beets
• 1 1/2 tablespoons red wine or sherry vinegar
• 1 teaspoon balsamic vinegar
• 1 teaspoon Dijon mustard
• Salt and freshly ground pepper to taste
• 1 small garlic clove, minced or put through a press
• 5 tablespoons extra virgin olive oil
• 1 tablespoon chopped fresh herbs, such as parsley, tarragon, chives, dill
