Citrus + Avocado Salad | Plants a la Dirty Raven

Ingredients

• 1 grapefruit
• 1 navel orange
• 1 blood orange
• 1 clementine
• 1 avocado
• 2 cloves of garlic, chopped
• 1/2 shallot, peeled + julienne
• 1/4 red finger chili, sliced
• 1 bunch of mint
• 1/4C peanuts, toasted, salted + chopped
• 1C cherry tomatoes
• 1 yellow zucchini
• 2 teaspoons of dijon mustard
• 1/2 cup of canola oil
• 1/4 cup of vinegar (I use cider)
