Ingredients

• 2 medium eggplants (900g), cut into 2cm cubes
• Ground sea salt, for seasoning
• 300g spaghetti
• 1⁄3 cup olive oil
• 3 cloves garlic, finely chopped
• 1 punnet cherry tomatoes, halved
• 400g can chopped tomatoes
• ²⁄3 cup white wine
• 1 tsp dried chilli flakes
• Cracked black pepper, for seasoning
• Grated ricotta salata or romano cheese, to serve
