- 2 to 3 kg spare ribs, unseasoned and not yet marinated FOR THE RUB:
- 5 tablespoons smoked paprika
- 2 tbsp sea salt
- 3 tbsp caster sugar
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- A pinch of cayenne pepper FOR THE MARINADE:
- A few tablespoons of olive oil
- 1 tablespoon ketjap manis
- 1 tablespoon ketchup
- 1 tablespoon mustard
- Juice of half a lemon
- 1 half teaspoon sambal
- 2 tablespoons bastard sugar
- 2 tablespoons honey or maple syrup
- A few sprigs of fresh rosemary
- A few sprigs of fresh thyme
