Ingredients

• 3 tablespoons extra virgin olive oil
• 2 large leeks chopped
• 4 celery stalks chopped
• 4 carrots peeled and chopped
• 2 teaspoons Herbamare
• 1 teaspoon freshly ground black pepper
• 2 teaspoons dried dill
• 1 teaspoon dried thyme
• 2 pounds yukon gold potatoes chopped
• 6 cups water (or chicken bone broth)
• chopped parsley
• smoked salmon (or leftover cooked salmon)
