Maple Vegetable Rice - Maple from Canada

Ingredients

• 1/4 cup extra virgin olive oil
• 1 onions, finely chopped
• 2 red peppers and/or yellow, diced
• 1/2 cup maple syrup (preferably golden syrup for its delicate flavor)
• 1 bottle of local beer
• 4 cups vegetable stock
• 2 cups long grain rice (rinse before cooking!)
• Salt and pepper, to taste
• 4 local apples
• 1/2 cup chopped coriander
