• 2 tbsp fresh mint, finely chopped (plus more to garnish)
• 4 thyme sprigs, picked
• 2 tsp Kosher salt
• 2 tsp cracked black pepper
• ¾ cup cotija cheese
• 1 shallot, sliced very thin and fried in olive oil until crisp
• 2 small avocados, sliced into crescents
• Zest from one lime
