Ridiculously quick and easy, this Sundried Tomato Mozzarella & Rocket Pasta is packed with flavor, perfect for family dinners. Optional leftover chicken adds depth.
Ingredients
- Pasta for 2
- 3 tbsp olive oil
- 1 small onion
- 1 or 2 cloves of garlic
- 1 cup sliced mushrooms, 2 if you dont use chicken
- 1 cup roughly shredded chicken
- 220 g shop bought sundried tomato, mozarella, pesto mix
- 2 tbsp creme fraiche
- 1/2 packet of rocket
- a small handful pine nuts,
- parmesan to grate on top
