Cream of Garlic Soup - Caroline Barty
A mellow creamy, velvety soup packed full of garlicky flavour. Buy large bulbs which are easier to peel. Serves 4-6
Ingredients
- 6 whole bulbs garlic
- 20g butter
- 2 tablespoons olive oil
- 2 onions, peeled and chopped
- 450-470g potatoes,(about 3 medium-sized ones) peeled and diced
- 1 litre good homemade chicken stock
- 300ml double cream
- To serve C hopped chives
