Ingredients

• 1 Lamb Leg, butterflied. Roughly 1.2 kg. (2 kg max).
• 20 Grams Extra Virgin Olive Oil (EVOO)
• 2 Pinches pink salt flakes
• black pepper to taste
• A few coloured peppercorns
• 1 lemons juice and finely grated zest
• 5 cloves garlic
• 1 Handful fresh mint
• A few sprigs of rosemary, foliage only
• 1 Handful rocket or arugula
• 100 Grams pistachio kernels
• 1 Pinch pink salt flakes
• Extra Virgin Olive Oil (EVOO) Enough to bring it all together
• 2 Handfuls rocket leaves
• extra rosemary and mint to garnish
• 1-2 Bunches cherry tomatoes on the vine
• 2 Teaspoons balsamic vinegar
• 1 Pinch black pepper
