Poon's all'amatriciana with WO Sauce

Ingredients

• 1 tbsp olive oil
• 200g pancetta or guanciale, cut into 1cm cubes
• 1 red onion, thinly sliced
• ½ - 1 tsp dried chilli flakes, depending on your tastes
• 1 ½ tbsp Poon’s WO Sauce , plus extra, to serve
• 700g passata or chopped tomatoes
• 400g spaghetti or bucatini
• 40g grated pecorino Romano or Parmesan, plus extra, to serve
