- 100 g (1 cup) all-purpose flour
- 1 Pinch of fine salt
- 50 g (1/4 cup) cold unsalted butter, cut into small cubes
- 45 ml (3 tablespoons) cold water
- 50 g (1/4 cup) butter, at room temperature
- 30 g (1/4 cup) corn starch
- 375 ml (1 1/2 cup) maple syrup (preferably dark syrup for its robust flavour)
- 125 ml (1/2 cup) water
- Pinch of salt
