Fresh, zingy and everything we love about summer! This is such a tasty and healthy soup with the added bonus that it's incredibly easy :)
Ingredients
- 1kg tomatoes, roughly chopped
- 2 cloves garlic, peeled
- Glug olive oil
- 1 tbsp balsamic vinegar
- Handful of fresh basil
- 1 stock cube, dissolved in a tiny amount of boiling water
- Salt & pepper, to taste
