Ingredients

• 6 spring onions
• 1 tbsp grated ginger
• 2 green chillies, chopped
• 1 tsp grated garlic
• 1 cup fresh coriander leaves
• 2 tsp lime juice
• 1 tsp fish sauce
• 6 skinless boneless chicken breast fillets
• 200g Asian mushrooms eg shiitake or shimeji
• 200g sugar snaps, sliced lengthways
• 50g butter, for frying
• 1 onion, finely chopped
• 1 tbsp (15ml) yellow curry paste
• 1 tin coconut cream
