- 2 Tbsp. olive oil
- 1 large onion, diced
- 4 large carrots, diced
- 5 stalks of celery, diced
- 2 medium red peppers, diced
- 4 white scallions, diced
- Salt and pepper
- 8 c. low-sodium chicken broth
- 2 c. water
- 2 chicken bouillon cubes
- 5 hard-boiled eggs
- 1 1/2 c. frozen corn
- 15 oz. can sweet corn cream style
- 1 1/2 lbs. shredded chicken
