Ingredients

• 500 g zucchini
• 6 small white onion
• 12 ripe cherry tomatoes
• 2 cloves of garlic
• 4 tbsp Extra Virgin Olive Oil
• 1-2 tbsp aisins (softened for 10 minutes in warm water)
• 1 tbsp pine nuts
• 1 tbsp Tuscan red wine vinegar I.G.T.
• 1 tbsp balsamic vinegar of Modena I.G.P.
• 2 tsp sugar
• mint
• salt
• 1 sprig of mint
