Ingredients

• 1 head Napa cabbage
• 1/2 sweet apple
• 1 piece ginger, 2", minced
• 1/2 bunch cilantro, minced, stems included
• 1 cup rice vinegar
• 1/4 cup white sugar
• 1 tablespoon coriander seeds, toasted
• 1 tablespoon fenugreek seeds, toasted
• salt and pepper to taste
