Ingredients

• Parsley or thyme sprigs to
• 2 150-g Traditional Sirloin Steaks or Fillet (5-oz each)
• 75 g Button mushrooms sliced
• 150 ml Red wine (1/4 pint)
• 2 tb olive oil
• 1 Shallot or small onion
• 2 tb thyme Freshly chopped OR
• 1 ts Cornflour up to 2
• 150 ml Beef stock (1/4 pint)
• 1 Garlic crushed
• Salt
