Ingredients

• 2 lbs catfish fillets (or other thin white fish fillets)
• 1/2 tsp. salt
• 1/4 tsp. ground turmeric
• 1 Tbsp. canola or vegetable oil
• 1 yellow onion (finely chopped)
• 2 cloves garlic (minced, about 1 tsp.)
• 1/4 tsp. cayenne pepper
• 2 tsp. curry powder
• 16 oz. diced tomatoes (with their liquid)
• 6 oz. baby spinach (optional)
